How to use the Bacon Curing Calculator

What this calculator does

This calculator converts a pork-belly weight into three recipe quantities: regular salt, pink curing salt #1, and – when wet brining is selected – water. It uses regular salt at the percentage you enter, curing salt at a fixed 0.25% of meat weight, and wet-brine water at 40% of meat weight. It is a weighing and recipe-scaling tool, not a complete food-safety plan. Cure composition, refrigerator temperature, meat thickness, curing time, smoking, cooking, and storage must still follow a tested recipe. When to use it

Use the calculator when scaling a dry cure to a new pork-belly size, preparing an immersion brine, checking a handwritten recipe's percentages, or producing a batch sheet for repeatable kitchen work. It is especially useful when the meat package is labeled in pounds but your curing scale reads grams.

How to calculate

  1. The calculator opens with a ready-to-use example: dry curing, 2.50 kg of meat, and 2.50% regular salt. The Excel workbook is available immediately.
  2. Choose Curing method. Select Dry curing for a rub or Wet brine to include water equal to 40% of meat weight.
  3. Enter Meat weight and choose kg or lb. Changing the unit converts the current value rather than changing only the label.
  4. Enter Salt percentage. A period is used as the decimal separator. Review the ingredient amounts and table, then weigh each ingredient independently.
  5. Select Download Excel to save the current inputs and results as a validated .xlsx workbook. Reset clears the demonstration and all calculated results; the download is then disabled until a complete valid set of values is entered again.

Input guide

Curing method is required and accepts Dry curing or Wet brine. Dry curing produces only the two salts; Wet brine adds water and a combined-brine total. Meat weight is required, must be greater than zero, and accepts ordinary decimal notation such as 2.5 kg or 5.5 lb. Commas, scientific notation, and mixed units are rejected to avoid ambiguous parsing. Larger meat weight increases every ingredient in direct proportion. Weigh the trimmed meat that will actually be cured, not the unopened package or an estimated serving weight. Meat weight unit switches between kilograms and pounds and converts the entered value. Salt percentage is required from 0.10% to 10.00%; 2.50% is the demonstration value, while 2.00% – 2.75% is the calculator's highlighted practical range. A higher percentage increases only regular salt. Do not confuse this field with the amount of pink curing salt, which remains fixed at 0.25% in this model.

Output guide

Total cure mixture is regular salt plus pink curing salt; it excludes water. Regular salt is meat weight multiplied by Salt percentage. Pink curing salt #1 is meat weight multiplied by 0.25%. This refers to a curing blend intended for short cures, commonly Prague Powder #1, not Himalayan pink salt. Water is zero for dry curing and 40% of meat weight for wet brine. Combined brine is water plus both salts for wet brining; for dry curing it equals Total cure mixture. The summary pills repeat the current method, meat weight, regular-salt rate, and curing-salt rate. The Ingredient breakdown table shows each ingredient, the rate applied to meat weight, the calculated amount, and its recipe role. These are exact mathematical conversions at the calculator's displayed precision, but they are not a determination that a curing process is safe.

Worked example

With the startup values, 2.50 kg equals 2,500 g. Regular salt is 2,500 × 2.50% = 62.50 g. Pink curing salt #1 is 2,500 × 0.25% = 6.25 g. Because Dry curing is selected, water is not used. Total cure mixture is therefore 62.50 + 6.25 = 68.75 g, matching the first-open result and workbook. Switching the same batch to Wet brine adds 2,500 × 40% = 1,000 g of water, making the combined brine 1,068.75 g.

Important curing-salt and food-safety notes

Use a tested recipe. Pink curing salt is concentrated and must be weighed accurately. This calculator assumes curing salt #1 at 0.25% of meat weight; proprietary blends can have different directions and must not be substituted by equal weight.

Keep the meat refrigerated throughout curing, distinguish curing salt #1 from ordinary salt and Himalayan pink salt, and follow the curing-salt manufacturer's directions. Salt percentage affects taste and moisture movement, but it does not replace validated time, temperature, thickness, smoking, cooking, and storage controls.
